Crafted from Rice, Water, and Hokkaido’s Touch: “Kobayashi Shuzo Brewery”

In 1878, “Kobayashi Shuzo Brewery” was established in Sapporo, Hokkaido, as a sake brewery. It’s known for its traditional sake-making methods in Hokkaido. In 1900, the brewery relocated to Kuriyama, Hokkaido, attracted by the clean and delicious water from the Yubari River. In 2006, their warehouse, known as “sakagura,” was registered as a national tangible cultural property. You can visit the “sakagura,” but you’ll need to make a reservation first.

Kobayashi Shuzo was a pioneer among Hokkaido breweries in taking on the challenge of producing sake using locally grown rice. At the brewery, you can purchase their sake and sake cups (ochoko). I highly recommend visiting “Kobayashi Shuzo Brewery” to experience the essence of Hokkaido’s sake culture.
